
This ultimate chorizo sandwich is the best way to liven up your lunchtime. A little effort goes a long way; sweet, sticky, spicy and satisfying.

serves 2 hungry people
200g chorizo
1 red onion
250g ciabatta
1 tbsp runny honey
1 tbsp olive oil
1tsp ground cumin
1 tbsp sherry vinegar
200g feta
2 tbsp creme fraiche
15g coriander
Salt & pepper
Preheat oven to 200C.
Peel, halve and slice the red onion. Remove the skin from the chorizo by scoring it down the length of the sausage with a sharp knife and peeling back the skin. Slice into thick coins. Place the onion and chorizo into a baking tray, along with the olive oil, honey, vinegar and ground cumin. Season with salt and pepper. Mix well with a wooden spoon to coat. Bake on the top shelf of the oven for 20mins, stirring halfway through.
Meanwhile, crumble the feta into a bowl with the creme fraiche. Beat well with an electric hand mixer until smooth and light. Finely chop the coriander and fold through the whipped feta. Season well with black pepper.
When the chorizo has 5mins left in the oven, put in the ciabatta to warm through.
Remove the ciabatta and baking tray from the oven. Slice the ciabatta in half, and press the bread cut side down in the oils from the chorizo. Top the bottom half of the sandwich with the chorizo mix. Spread the whipped feta on the top slice and sandwich together.
